Description

An excellent way to use leftover pulled pork, very tasty.

Ingredients

  • 1-½ cup Broth (chicken Or Beef)
  • 1 can (14.5 Oz. Size) Diced Tomatoes
  • 1 can (15 Oz. Size) Pinto Beans
  • 2 Tablespoons Chili Powder
  • ½ teaspoons Garlic Powder
  • Salt And Pepper, to taste
  • 1 whole Medium Onion, Chopped
  • 2 cups Pulled Pork
  • 1 package (8 Oz. Size) Shredded Cheddar Cheese
  • Sour Cream For Garnish

Preparation

In a stew pot, combine broth, tomatoes with juice, beans, and spices. Over medium heat, bring to boil. (Note: I use pinto beans, but you could use black beans, kidney beans, or even navy beans.)

Meanwhile, in a skillet, saute onions and brown the pulled pork. When browned, add to the pot. Reduce heat to low and simmer about 20 minutes, to allow flavors to marry.

Serve with saltine crackers, or Frito corn chips, with cheddar cheese and a dollop of sour cream on top of each bowl. Delicious!

I used light kidney, pinto and black beans. I smoked a couple Boston butts last weekend and froze about 3 pounds for something like this. The smoked flavored pork added to the mix was fantastic! Thanks for sharing this as most will use beef in their chili beans,,,,
