Description

Pulled chicken tortilla bean stew filling is a tasty dish that is very easy to make with less than 10 ingredients. Join me in making this recipe.

Ingredients

  • 1 cup Water
  • ⅓ cubes Chicken Stock
  • 200 grams Chicken Breast
  • 2 Tablespoons Sunflower Oil
  • 1  Onion, Finely Diced
  • 1  Bell Pepper, Finely Diced
  • 2 cloves Garlic, Finely Diced
  • 70 grams Tomato Puree
  • 1 Tablespoon Sriracha Sauce Or Hot Chili Peppers (optional)
  • 250 grams Canned Kidney Beans, Drained
  • 2  Homemade Corn Tortillas

Preparation

Bring one cup of water to the boil and crumble the chicken stock cube in the water. Add chicken breast to the boiling water and simmer for 25 minutes. Take the chicken out of the boiling water and shred using two forks.

Heat sunflower oil in a Dutch oven on medium to high heat. Fry onion, bell pepper and garlic. Add small tin of tomato puree and 1 cup of chicken stock. If you like spicy food, you can add hot chili peppers or Sriracha now.

Add shredded chicken and stir thoroughly before adding the drained kidney beans. Let the stew shimmer for at least another 20–25 minutes before serving with corn tortillas.
