Description

If you like the enchiritos at Taco Bell, you’ll love this quick and easy dish. It takes only minutes to prepare, travels very well, and feeds a hungry crowd. Perfect for work, football parties, tailgate parties, fight parties, etc.

Ingredients

  • 2 pounds Lean Ground Beef
  • Taco Seasoning, Or Your Own Blend Of Spices For Taco Meat
  • 1 can (28 Oz. Can) La Victoria Mild Enchilada Sauce
  • 2 cans (10 Oz. Can) Cream Of Chicken Soup
  • 30 whole White Corn Tortillas
  • 2 cups Shredded Mexican Cheese Blend
  • 1 can (6 Oz. Can) Pitted Black Olives

Preparation

Brown ground beef and add spices as you would if you were making taco meat. (I use black pepper, seasoned salt, cumin, garlic powder, chili powder, and onion powder.) Drain fat and set aside.

Cut the tortillas into cubes; set aside. Drain olives and cut in half; set aside.

In a large stockpot on medium heat, add the enchilada sauce and cream of chicken soup. Mix well until thoroughly blended. Bring up the heat to just below a boil. By handfuls, add in the tortilla cubes and mix thoroughly. Add the ground beef, cheese, and olives and mix thoroughly.

Simmer, stirring occasionally, for about 10 minutes and until the cheese is melted and all ingredients are heated through.

What a huge hit at my house! This was such an easy, quick, cheap meal that will certainly become a staple for us. Only thing I changed was added in a medium onion and a jalapeno during the heating of sauce and soup. Nice added crunch!

This recipe was really fun to try and it was super easy to make. I did use shredded chicken instead of beef (I was out) and I omitted the olives (we’re not fans at our house). Overall this is a wonderful, fun recipe. It was a little bland for our taste and next time I will probably add some chunky salsa and hot sauce and maybe some green chilis. We will be trying this again though! Thanks for sharing.
