Description

You can use either chicken or pork in this recipe. It’s so good my hubby always has to go back for more. The kids eat it up too!

Ingredients

  • 3 Tablespoons Peanut Butter
  • 2 Tablespoons Rice Vinegar
  • 3 Tablespoons Soy Sauce
  • 1 Tablespoon Sesame Oil
  • 2 Tablespoons Minced Garlic
  • 1 Tablespoon Ginger, Minced
  • 2 Tablespoons Brown Sugar
  • 2 Tablespoons Vegetable Oil
  • 2  Boneless Pork Chops Or Chicken Breasts
  • 3  Zucchini
  • 8 ounces, weight Mushrooms
  • 1  Carrot, Peeled And Shredded
  • 1 Tablespoon Cornstarch (Optional)
  • ¼ cups Water
  • 6 cups Cooked Rice
  • 2  Green Onions, Sliced (OPTIONAL)

Preparation

Mix the peanut butter, vinegar, soy sauce, sesame oil, garlic, ginger, and sugar in a bowl and set aside.

Put your oil in a large, heavy skillet and set to high heat. Cut your meat into bite-sized pieces and add it into the hot skillet. Stir it occasionally as you prep the veggies. Quarter the zucchini lengthwise then cut into 1/2″ pieces. Quarter the mushrooms and shred your carrot.

When meat is white on all sides but not cooked through, add your zucchini. Cover and cook for 3 minutes, stirring once or twice. Pour in the sauce mixture and shredded carrots. Mix well then cover and cook 2 minutes more. Next put in the mushrooms. Cover and cook 3-5 minutes stirring a couple times.

If the sauce is to thin for your liking, mix together the cornstarch and water in a small bowl and stir into the meats and veggies. Cook and stir for 1-2 minutes.

Serve over hot riceand top with green onions if desired.
