		<description>I made this for some neighbors who are going through a hard time right now.  It was absolutely delicious!  I added a little bit of chopped jalapenos from my garden to the tacos and made some mexican rice and pinto beans to go with them.   Both the neighbors and my husband raved about them.  I will definitely be making these again.  Thanks!</description>

		<description>This has become my go-to recipe when I&#039;m looking to serve  a number of people. The seasonings are delicious (though I add chipotle chili powder) and it comes out divine every time as long as you give the meat time to get tender! 

Two other things I do with mine- I cut up the pork shoulder into large chunks to make the cooking time a little faster and I splash in a healthy cup of the cooking juices before I pop it into the oven.

		<description>Cotija cheese is usually found by the cream cheese, or string cheese or refrigirated bagels. It&#039;s round like a puk and is in a clear plastic packaging. You can use any shredded cheese if you cant find that. 

Queso Fresco is also a good choice.</description>

We travel to Mexico frequently and are big fans of carnitas as well as carne asada tacos, so there was a lot of pressure on this dish. This was better than anything we have had in Mexico. I didn&#039;t change a thing except I cooked it in a crockpot instead of on the stove top. Oh, and I doubled the amount because my family is ravenous!  : ) I highly recommend this one.
