Begin by cooking your chicken breasts. I like to sauté them in a pan for a while, let them rest for at least 5 minutes to lock in the juices and then dice them up. While the chicken breasts are cooking, boil your noodles 8 to 10 minutes or until al dente. I use anything from macaroni noodles to rotini pasta, so it’s totally up to your preference.
Combine soup, sour cream, and poppy seeds in a mixing bowl. Add chicken and noodles and put in a baking dish. I usually use a 9×11 dish. Top with crushed Ritz crackers and melted butter.
Bake at 350F for 3o minutes or until golden brown and bubbly.
