Description

Adapted from Rachael Ray, these Pizza Puffs are kid-friendly and easy to freeze! Perfect for a busy family!

Ingredients

  • ¾ cups Flour
  • ¾ teaspoons Baking Powder
  • ¼ teaspoons Oregano
  • ¼ teaspoons Crushed Red Pepper
  • ¾ cups Whole Milk
  • 1  Egg, Lightly Beaten
  • 6 ounces, weight Mozzarella Cheese, Shredded
  • 4 ounces, weight Pepperoni, Cubed
  • ½ cups Pizza Sauce

Preparation

Preheat the oven to 375°F. Grease a 24-cup mini-muffin pan.

In a large bowl, whisk together the flour, baking powder, oregano and red pepper. Whisk in the milk and egg. Stir in 1 cup of the mozzarella cheese and all of the pepperoni. Let stand for 10 minutes.
Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.

Meanwhile, microwave the pizza sauce until warmed through.

When you pull them out of the oven, sprinkle the puffs with remaining mozzarella cheese. Serve the puffs with the pizza sauce for dipping.

Freeze baked puffs in a single layer on a baking sheet. Then once frozen, transfer to a freezer bag. To reheat, bake the frozen puffs on a baking sheet in a 350 F oven for 8-10 minutes.
