Description

Whole wheat pasta covered in provolone, pepperoni and fresh mozzarella!

Ingredients

  • 2 cups Whole Wheat Pasta, Cooked
  • ½ cups Tomato Sauce
  • 1 ounce, weight Fresh Mozzarella, Chopped
  • ½ Tablespoons Italian Seasoning
  • 2 Tablespoons Parmesan Cheese
  • 15 slices Pepperoni, Cut Into Fourths
  • ½ cups Provolone, Shredded

Preparation

Combine pasta and sauce in a bowl. Top with fresh mozzarella, seasoning, parmesan, and half of the pepperoni. Add on provolone cheese and remaining pepperoni.

Set under the broiler until cheese is melted, about 30-60 seconds.

Excellent! I added some extra veggies (since we put them on our pizza) and some bacon (cause what pizza isn’t better with bacon). My husband already requested a repeat in the rotation this week!

This was great-a good alternative to spaghetti. I used mostly mozarella because I didn’t have provolone, but it was still good. The leftovers heated up well too, which is always a plus.

I made a few changes with what I had on hand, and didn’t really measure much (I hardly ever do), but this was delicious.

Next time I make it, I’d like to use fresh chunks of pepperoni instead of slices, and cook my sauce a little longer (I usually make my own).
