A grown-up version of chicken fingers!
Preheat oven to 400 degrees F.
Combine pistachios, bread crumbs, pepper, and brown sugar in a food processor. Pulverize until it forms a very fine breading. Spread half the mixture on the bottom of a baking dish (use a dish that is big enough to hold all of the chicken).
Whisk eggs together in a small dish. Coat chicken strips in egg wash and place them on top of the pistachio mixture in the baking dish. Turn the chicken over to coat both sides in the pistachio mixture. Use remaining pistachio mixture to sprinkle over the top of the chicken strips.
Bake for 30 minutes.
