Description

Pineapple Chicken Salad pitas with a taste of the tropics!

Ingredients

  • 2-½ cups Cooked Chicken Breast, Chopped
  • 1 cup Matchstick Carrots
  • ¼ cups Sliced Almonds, Toasted
  • ¼ cups Canola Mayonnaise
  • ¼ cups Finely Chopped Green Onion
  • ¼ cups Plain Yogurt
  • 1 Tablespoon Worcestershire Sauce
  • ½ teaspoons Garlic Powder
  • ¼ teaspoons Salt
  • ¼ teaspoons Black Pepper
  • 8 ounces, weight Canned Crushed Pineapple, Drained Well
  • 6 whole Whole Wheat Pitas, Each Cut In Half
  • 6 whole Romaine Lettuce Leaves

Preparation

Combine first 11 ingredients in a large bowl, stirring well.

Line each pita half with 1 lettuce leaf; fill each half with 1/3 cup chicken mixture.

Yum! This was great! I did leave out the yogurt because of some dairy sensitive folks in our house, and I didn’t have any almonds. But it still tasted great! Will make it again!
