Description

This Pesto & Goat Cheese Burger is my take on my absolute favorite restaurant burger ever from Hobdoddy’s – The Magic Shroom.

Ingredients

  • 1 pound Lean Ground Beef
  • 1 teaspoon Kosher Salt, Divided
  • ½ teaspoons Pepper, Divided
  • 1 Tablespoon Olive Oil, Divided
  • 6 whole Cremini Mushrooms, Thinly Sliced
  • ½  Large Yellow Onion, Thinly Sliced
  • ⅓ cups Pesto
  • 4 whole Whole Wheat Buns
  • ⅓ cups Crumbled Goat Cheese

Preparation

Season ground beef with ½ teaspoon kosher salt and ¼ teaspoon ground black pepper. Form mixture into 1/4-pound patties and set aside.

Heat ½ tablespoon olive oil in a fry pan over medium-high heat. Once hot, add sliced mushrooms and onions and sauté until caramelized and golden brown, about 8–10 minutes.

Heat another large skillet or griddle over high heat and add the remaining ½ tablespoon olive oil. Once hot, add patties and sear until golden brown on each side, about 1–2 minutes per side. Turn the heat to medium-high and cook for an additional 3–4 minutes per side. Remove from heat.

To assemble the burger, spread 1 to 2 tablespoons pesto on the inside of the buns. On the bottom bun, place the patty, followed by about 1 tablespoon goat cheese, and then sautéed onions and mushrooms. The heat from the mushrooms and onions will help to melt the goat cheese slightly. Place the top bun on top and serve.
