Description

These are my husbands favorite! Very easy and tasty!

Ingredients

  • 2 whole Large Chicken Breasts
  • 1 cup Basil Pesto
  • 4 slices Muenster Cheese (or Mozzarella)
  • 4 whole Sandwich Size Buns
  • Sliced Tomatoes
  • Lettuce Leaves
  • 2 Tablespoons Olive Oil

Preparation

Place the chicken breasts between two sheets of waxed paper. Use a meat pounder to pound the breasts to an even thickness of about 1/2 inch. Cut each breast in half so that you have 4 pieces (to better fit the buns). Season chicken with salt and pepper.

Heat olive oil in a large nonstick skillet on medium heat.

Add chicken to the skillet for about 4 minutes on each sides till brown and cooked through.

Once chicken is just about cooked, place 1/4 cup of pesto on each piece of chicken and a slice of cheese on top. Cover the pan with a lid until the cheese melts.

Transfer chicken breasts to toasted buns and add lettuce and tomato.

This was a really tasty, quick and easy supper for us. I spent all summer putting up pesto, so it is nice to be able to use it in a variety of ways. A quick defrost, a quick saute of the chicken…some toasted buns, and we had a lovely quick evening meal.
