Description

A chicken sandwich using fresh or store bought pesto.

Ingredients

  • 2 whole Chicken Breasts, Fresh Or Frozen
  • Seasoning Salt
  • 4  Hoagie Rolls
  • 4 Tablespoons Pesto (homemade Or Store Bought), Or As Much As Desired
  • 4 slices Cheese
  • 4 slices Fire Roasted Bell Peppers
  • 1 whole Avocado, Sliced
  • 4 slices Tomatoes

Preparation

Preheat oven to 450 degrees F.

Coat chicken generously with seasoning salt and cook on a skillet over medium heat. Make sure to flip it so it doesn’t burn, and cook until it is fully cooked, slightly browned, and there is no pink remaining (this will probably take 5 minutes per side). Remove chicken to a cutting board and cut it into ½-inch slices. Set aside.

Slice the hoagie rolls in half horizontally and smear pesto on the inside of each slice. Place the rolls onto a baking sheet, pesto side up. On one side, place the sliced cheese, and on the other side, place the sliced chicken. Put in the oven for 6-8 minutes, or until the cheese is melted.

Take out of the oven and place the rolls onto a plate. Top with peppers, avocado, and tomatoes and then take the top part of the hoagie roll and press down. Insert a toothpick on each side and slice the sandwich diagonally.

Enjoy with chips, any type of salad (potato, green, fruit, etc.), fruit, or a bowl of soup.
