Description

Seared pork with caramelized peppers and onions.

Ingredients

  • 1  Red Or Green Bell Pepper
  • 1  Medium Yellow Onion
  • 1 sprig Fresh Sage
  • 2 cloves Garlic
  • 2 Tablespoons Dark Brown Sugar
  • 2 teaspoons Emeril Spice Or Similar Rub
  • ½ teaspoons Ground Chipotle Pepper
  • 1 whole Pork Tenderlion
  • 2 Tablespoons Olive Oil, Divided
  • 1  Large Mufaletta Roll, Or 3 Individual Sandwich Buns
  • Optional Condiment: Mayonnaise, To Taste

Preparation

Preheat oven to 400 degrees F.

Thinly slice the peppers, onions, sage, and garlic. Set aside.

Combine the sugar, spice rub, and chipotle in a separate bowl.

Line a baking sheet with tin foil. Rub pork tenderloin generously with the sugar and spice rub.

Heat 1 Tablespoon of olive oil on high in a frying pan and sear pork on all sides. Remove pork to the lined baking sheet and bake in oven for 20 minutes. When finished, remove the pork from the oven and tent it with tin foil for 10 minutes before slicing. Do not tent for more than 10 minutes!

While the pork roasts, wipe out the frying pan and heat remaining tablespoon of oil. Add onions and peppers and saute for a few minutes until veggies are soft. Then add garlic and sage and cook for another 1-2 minutes.

When pork has rested, slice it thinly and arrange it on the toasted roll(s). Add a generous mound of onion and pepper mixture and spread with mayo if desired.
