Description

The dish was easy to make, easy to freeze, then easy to bake again. A fun play on lasanga.

Ingredients

  • 6 pieces Lasagna Noodles
  • 1 cup Cottage Cheese
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 48 slices Pepperoni
  • 6 slices Swiss Cheese
  • 2 cups Meatless Spaghetti Sauce
  • ¼ cups Shredded Parmesan Cheese

Preparation

Cook noodles according to package directions; drain. Combine the cottage cheese, oregano and basil.
Lay noodle flat on the counter, line with 8 pieces of pepperoni, then top with Swiss cheese. Top with cottage cheese mixture. Carefully roll up filled noodle and place seam side down in a greased shallow baking dish. Top with spaghetti sauce and Parmesan cheese.
Cover and bake at 350 degrees for 20-25 minutes or until bubbly.
Let stand for 5 minutes before serving.

These were delicious. I used ricotta cheese instead of cottage. I made more than the recipe called for and froze some. The defrosted roll ups were just as good as the first time around.

These were yummy and easy to make! I also needed to double the cottage cheese mixture, but they turned out great!

Great flavor and so easy to make!!! I needed double the amount of the cottage cheese mixture and put some homemade pasta sauce on the bottom of the casserole dish. I will definitely make this again!

These were fantastic and so much easier to make than lasagna. My only criticism was that my pasta sauce got a bit runny for my liking, but that’s not the recipe’s fault! My mind was running with ways to modify it, switch up the meat/cheese or try a Mexican variety with seasoned meat, cheddar cheese, and salsa in place of the sauce.

I made this for dinner last night, with a few modifications – I just used some Italian Seasoning in place of the oregano and basil, and I used mozzarella instead of Swiss cheese. The results were delicious! My (almost) 2 year old enjoyed helping with the assembly too! We’ll definitely be making these again.
