Place the roast in a crockpot. Sprinkle each side with garlic salt and oregano (to your taste). Drain jar of peppers and pour peppers, beer, and consomme over roast. Cover and cook on low for 8-10 hours or on high for 4-6 hours.
Remove beef from crockpot and put it onto a cutting board. Trim off any fat and use two forks to shred the meat. Return meat to crockpot and stir into juices.
Serve on rolls with provolone or mozzarella cheese.
