Description

Why have cranberries only at the holidays? This is my mom’s recipe. It is a family favorite that even my slightly picky kiddos like. If you didn’t stock up on cranberries during the holidays, my Mom uses dried cranberries that have been soaked in water in a pinch! Serve with brown rice. Enjoy.

Ingredients

  • ½ cups Flour
  • ¼ teaspoons Black Pepper
  • 6 pieces Boneless, Skinless Chicken Breasts
  • 3 Tablespoons Butter Or Margarine
  • 1 cup Water
  • 1 cup Fresh Or Frozen Cranberries
  • ½ cups Packed Brown Sugar
  • ¼ teaspoons Nutmeg
  • 1 Tablespoon Red Wine Vinegar (optional)

Preparation

Combine flour and pepper in a shallow bowl. Dredge chicken on both sides. Melt butter or margarine in a skillet. Brown chicken on both sides. Remove chicken from pan and keep warm.

In the same skillet, combine water, cranberries, brown sugar, nutmeg and vinegar if using. Cook and stir until berries burst, about 5-7 minutes.

Return chicken to the skillet. Cover and simmer for 20-30 minutes until chicken is done. Baste with sauce occasionally while cooking.
