Description

A kid (and man!) friendly vegetarian pasta dish that comes together in 15 minutes flat.

Ingredients

  • 8 ounces, weight Dry Penne Pasta
  • 1 Tablespoon Olive Oil
  • 2 cloves Garlic, Minced
  • 1 can Cannellini Beans (15 Oz), Drained And Rinsed
  • ¼ cups Sun-dried Tomatoes, Chopped
  • 3 cups Raw Baby Spinach
  • 1 Tablespoon Lemon Zest
  • 2 whole Lemons, Juiced
  • 1 teaspoon Salt
  • ¼ teaspoons Cayenne Pepper
  • ¼ cups Freshly Grated Parmesan Cheese (or More To Taste)

Preparation

Cook the pasta according to package directions in boiling salted water. When cooked, drain the pasta and reserve one half cup of cooking liquid. Set both the pasta and the water aside.

In a large skillet or Dutch oven, heat the olive oil. Add the minced garlic and saute for two minutes, until toasted and fragrant (be careful not to burn!). Add the cooked pasta, beans, sundried tomatoes and spinach and cook until spinach wilts. Once spinach wilts, add the lemon zest, juice, salt, cayenne and cheese and toss well. Add some of the cooking water if the mixture seems dry. Once everything is heated through, serve!

Made this for dinner Friday. The flavour was nice, but even with the 1/2 cup of pasta water it was still extremely dry. I think next time I will reserve more water or try to make a sauce to go with it.

I just made this and am trying very hard not to shovel it all in my mouth at once. YUM!!!

I used whole wheat pasta and 1/2 arugula because I only had 1 1/2 cups spinach. I am used to the lemon/cayenne/spinach combo from other things, but combined with the tomatoes and beans is amazing! Definitely a favorite pasta recipe. Thank you for sharing!

This was great! I agree with kraftya, I loved the taste that the lemon added to it – it was nice – but subtle enough that it didn’t taste like a lemony pasta. I did add chicken (for my husband). I doubled the recipe because we like to have leftovers so we had a pretty large amount left…and my husband ate every last bite for every single meal the next day! Score! Thanks for sharing!

Very good pasta recipe! I like the fresh taste the lemon zest and juice gives, as well as the kick of the cayenne. The added Parmesan cheese mixed with the pasta water gives it a slightly stringy, but wonderfully gooey, sauce. Definitely not plain or average. I will be making this dish again!

This was delicious. It was a nice, light way to prepare pasta. I forgot to reserve pasta water, so I dissolved a chicken bouillon cube in 1/2 cup water instead. Other than that, I followed the recipe and we loved it!
