Description

Simple, hearty Italian-inspired dish. The cabbage is an unexpected but delicious addition.

Ingredients

  • 1 bag (16 Oz. Bag) Penne Pasta
  • 1 pound Italian Sausage, Crumbled (I Pulse Mine In A Food Processor)
  • 4 cups Finely Sliced Green Cabbage
  • 1 clove Garlic, Crushed Or Minced
  • 3 cups Jarred Pasta Sauce
  • 2 Tablespoons Olive Oil
  • ½ teaspoons Salt
  • 1 cup Shredded Parmesan

Preparation

In a large pot, cook pasta according to directions. While cooking, prepare sausage: remove from casing and crumble (I pulsed mine in a food processor). In a deep pan or pot, steam cabbage with just enough water to cover the bottom. Cook until all water has been absorbed. To the cabbage, add olive oil, sausage, and garlic. Cook over medium-low heat for 3-4 minutes, then salt lightly. Drain pasta, then add back to the pot and toss with pasta sauce. Stir in half of the sausage and cabbage and salt to taste (this will vary, depending upon how salty your jarred sauce is). Serve in shallow bowls, topped with another spoonful of sausage and cabbage, then parmesan.

This was delicious! I just had it tonight. I sliced the sausage instead of grinding it up – they were like meatballs. I wasn’t sure if I should cook the sausage before adding it to the cabbage, so I didn’t. It turned out fine, though took a bit longer to cook. I’ll definitely be making this again!
