Description

Delicious oven-baked pecan-crusted chicken breast with an Oriental honey mustard that is to die for! I make a big batch of the Oriental honey mustard and keep it in my fridge at all times! It’s my favorite condiment now.

Ingredients

  • 4 whole Boneless, Skinless Chicken Breasts
  • 2 cups Pecans (should Measure Out To 2 Cups After Being Chopped)
  • 1 cup Italian Seasoned Breadcrumbs
  • 2 whole Beaten Eggs
  • 3 Tablespoons Honey
  • 1-½ Tablespoon Rice Wine Vinegar
  • ¼ cups Mayonnaise
  • 1 teaspoon Dijon Mustard
  • ⅛ teaspoons Sesame Oil

Preparation

ORIENTAL HONEY MUSTARD
Mix honey, rice wine vinegar, mayonnaise, Dijon mustard and sesame oil in a bowl. (I use a whisk.)

PECAN CRUSTED CHICKEN
1. Preheat oven to 400 degrees.
2. Chop pecans into very, very tiny pieces (I put them into a ziploc bag and use a hammer to do it).
3. Combine chopped pecans with bread crumbs.
4. Break eggs into a bowl.
5. Coat chicken in the egg mixture, and then the pecan/bread crumb mixture. Make sure to coat it all thoroughly.
6. Place chicken on a baking sheet and bake in the oven for 20-30 minutes, depending on how thick or thin your chicken breasts are.
7. Take chicken out of the oven and let sit for 3 minutes before spooning Oriental honey mustard on top. Serve.

I made these tonight and I wanted them done faster so I cut the chicken into strips and dipped each strip. I loved it that way because there was more topping on the chicken. The honey mustard sauce was awesome!! I used peanut oil because I didn’t have sesame oil. Sooo delicious!! My husband told me a couple times how good dinner was!!! thanks for sharing!!

the broiler is a good idea! mine usually comes out crispy, so i’ve never had to try and fix the problem. just make sure you keep an eye on it because the pecans burn!

First off, the oriental honey mustard is to die for! I was only slightly disappointed that the chicken didn’t have a bit more crunch to it – but it was so moist and cooked to perfection on the inside. Possibly I could of put it under the broiler for just a bit to achieve some crunch?? I made your sweet potatoe fries with this and they were awesome.

This was wonderful! I didn’t have pecans…I know….I should have just gone shopping first…but we did almonds and it worked perfectly. We did the sauce and the sweet potatoes and paired it with some lemon garlic green beans and the plate was gorgeous. Rave reviews from the little ones and I was happily stuffed!
