Description

A delicious gluten-free and vegetarian dish that utilizes quinoa in a completely different way.

Ingredients

  • ½ cups Quinoa, Cooked According To Directions
  • 1 cup Water, For Cooking Quinoa
  • 1 whole Apple, Finely Chopped
  • 2 Tablespoons Peanut Butter
  • 1 Tablespoon Honey

Preparation

In a medium pot, cook quinoa in water according to package directions.

While quinoa cooks, dice apple into small pieces. Measure out peanut butter and honey. Set aside.

Once quinoa is done, remove from heat. Add in diced apple, peanut butter, and honey. Stir together until all is combined. Serve warm.

This is great! I made mine with a banana because I didn’t have any apples on hand. I also made double the quinoa so that I can have it for breakfast again this week! Thanks for sharing.
