Great as an appetizer or a main course, this dish cooks up in no time. The marinade tenderizes the chicken while adding a nice nutty kick.
Combine all marinade ingredients in a bowl. Cut chicken into thin 1/2-inch wide strips and place in the marinade. Cover and refrigerate for 30 minutes.
Meanwhile, light a gas grill (or if using the stovetop, heat over medium-high). Remove chicken from the marinade. Thread onto skewers and grill for about 6-8 minutes. Turn skewers over and cook the other side for another 6-8 minutes. Serve with grilled vegetables.
