Description

Pasta with Spanish chorizo sausage and authentic homemade tomato sauce, the perfect blend between the Italian and Spanish cuisine.

Ingredients

  • 1 whole Onion
  • 2 Tablespoons Olive Oil
  • 2 pinches Salt
  • 4 whole Tomatoes - Medium, Ripe
  • 2 Tablespoons Sugar
  • 1 pound Pasta (I Used Penne)
  • 1 whole Chorizo Sausage
  • 4 ounces, weight Grated Cheese

Preparation

For the tomato sauce:

1. Chop the onion and cook over low heat for 10 minutes in a saucepan with a tablespoon of olive oil and a pinch of salt.

2. Peel and dice the tomatoes and add them to the saucepan with the sugar to cut the acidity (add your favorite spices as basil or oregano). Cook the vegetables over low heat for 12 to 15 minutes.

3. Use an immersion or stand blender to puree the mixture into a sauce. Keep at a simmer until ready to serve.

For the pasta:

1. Bring a pot of lightly salted water to a boil. Add pasta and cook according to package instructions. When done drain off the water and set the pasta aside.

2. Cut the chorizo sausage into slices and fry with a drop of olive oil in a frying pan over medium heat for 3 to 4 minutes.

3. Mix the pasta with the tomato sauce and the fried chorizo in a rectangular, broiler-safe baking dish (13 x 9 x 2 inches).

4. Preheat the broiler in your oven. Sprinkle grated cheese on the top and broil for 3-4 minutes or until golden.

5. Serve and enjoy your pasta recipe with tomato sauce and chorizo!
