Description

My family’s favourite ever meal: pasta with a spicy sausage ragu.

Ingredients

  • 1 Tablespoon Olive Oil
  • 1 whole Onion, Chopped Finely
  • 2 whole Carrots, Chopped Finely
  • 2 sticks Celery Chopped Finely
  • 6 whole Sausages
  • ½ teaspoons Hot Chili Powder
  • ½ teaspoons Smoked Paprika
  • ½ cups Red Wine
  • 1-½ pounds, ¾ ounces, weight Passata
  • ½ pounds, 2-⅝ ounces, weight Pasta
  • Parmesan Cheese, For Garnish (optional)

Preparation

1. In a large pan, heat the oil over a medium heat. Add the onion, carrot and celery and cook until soft and translucent.
2. Remove the sausages from their casing and add to the pan with the chilli and paprika. Cook until brown.
3. Turn the heat up and throw in the red wine. When the alcohol has burned off, add the passata. Turn down the heat and simmer for at least 30 minutes.
4. Serve with pasta and garnish with parmesan if desired.

Hi, Passata is uncooked crushed and sieved tomatoes. You can normally buy it in jars (Amazon sell it) or make it at home by pureeing tomatoes in a food processor.
