Description

Pasta tossed with fresh mint, and peas, along with grated Parmesan cheese makes not only for an easy weekday meal, but a delicious one to boot.

Ingredients

  • 1 pound Fettuccine, Or Your Favorite Pasta
  • 1 cup Cooked Pasta Water Reserved
  • 1 Tablespoon Olive Oil
  • 2 Tablespoons Unsalted Butter
  • ½ teaspoons Cracked Black Pepper
  • ½ cups Garlic Scapes, Blanched, Or 1 Clove Of Minced Garlic
  • 2 cups Frozen Peas
  • 1 cup Fresh Mint, Packed
  • ½ teaspoons Salt To Taste
  • 1 cup Freshly Grated Parmesan Cheese

Preparation

Cook pasta al dente, following directions on package. Reserve pasta water.

Start by heating a large skillet over medium heat. Add olive oil and butter. Once melted, add cracked black pepper, blanched garlic scapes, and frozen peas. Add reserved pasta water and stir, letting the mixture come to a boil. Once boiling, reduce heat to medium-low, then add cooked pasta. Stir, making sure to coat all of the pasta.

Once pasta is coated, add fresh mint. Stir and toss. Season with a touch of salt, then fold in Parmesan cheese.

Stir again, then plate and serve. Season with a touch more Parmesan cheese, adjusting seasoning as needed.
