Description

It doesn’t get much better than fresh tomatoes, basil and cream. Oh, and the freshly grated parmesan cheese doesn’t hurt either! I do love the bounty of summer!

Ingredients

  • 1-½ pound Fresh Plum Tomatoes
  • 2 Tablespoons Olive Oil
  • 3 cloves Garlic, Minced
  • ½ teaspoons Salt
  • 1 teaspoon Sugar
  • ¼ teaspoons Crushed Red Pepper
  • 2 Tablespoons Balsamic Vinegar
  • 1 teaspoon Fresh Thyme Leaves
  • 2 Tablespoons Fresh Minced Basil Leaves
  • ⅓ cups Heavy Cream
  • 8 ounces, weight Pasta, Cooked Al Dente
  • Parmesan Cheese And Fresh Basil For Garnish

Preparation

Peel the tomatoes, then seed using a fine mesh sieve to catch the seeds and reserve the tomato juice. Discard the seeds.

Chop tomatoes or pulse quickly in a food processor.

Heat the oil in a large skillet over medium high heat. Add garlic and saute for 30 seconds.

Add chopped tomatoes, reserved tomato juice, salt, sugar, red pepper, balsamic vinegar, thyme and basil and bring to a low boil.

Reduce heat to low and simmer for 30 minutes. Stir in heavy cream and cook just till heated through.

Serve over your choice of pasta, and garnish with grated parmesan cheese and fresh basil.

Note: You can substitute a 28 ounce can of crushed Italian tomatoes if desired.

Absolutely delicious. I’ve made it several times now. The batch is tiny so if you’re making it for a crowd make sure to double or triple the recipe (I double the recipe for my family of 5 and that’s just 2 adults).

This is a good, flavorful, fresh tasting, sauce. The only change I’ll make the next time I make this is to cut the amount of balsamic vinegar in half- just due to my family’s personal taste. Great recipe. :-)
