Description

Pasta bathed in a delicious creamy tomato sauce.

Ingredients

  • 14 ounces, weight Dried Pasta
  • 2 cloves Garlic
  • 1 Tablespoon Olive Oil
  • 15 ounces, weight Diced Tomatoes
  • 1 teaspoon Kosher Salt
  • ½ teaspoons Coarsely Ground Black Pepper
  • 1 teaspoon Dried Basil
  • 1 pinch Baking Soda
  • 1 cup Skim Milk
  • 1 Tablespoon Cornstarch

Preparation

Bring a pot of water to a boil, then add pasta and cook pasta according to package instructions.

Meanwhile, finely chop 2 garlic cloves.

Heat olive oil in a saucepan over medium-high heat. When hot, add garlic and saute the garlic until the edges are just starting to turn brown.

Add in the tomatoes, salt, pepper and basil and stir well. Sprinkle a (small) pinch of baking soda into the tomatoes and stir well.

Add 3/4 cups of milk (save 1/4 cup for later), and stir well. Turn down the heat to low, cover the pan, and simmer for 10 minutes stirring occasionally.

After 10 minutes, uncover the pan and continue to simmer for another 10 minutes, stirring occasionally.

In a small bowl or cup, mix the reserved 1/4 cup milk with the cornstarch, whisking well until smooth. Add cornstarch mixture to the tomatoes, and cook for another minute until thickened.

Drain pasta, and add it to the pan. Toss with sauce.
