Description

This is a variation of the French’s Onion chicken that you see on television commercials. The flavor is much more in depth with this!

Ingredients

  • 3 cups French Fried Onions
  • ½ cups Parmesan Cheese (from The Bottle!)
  • 2 whole Eggs
  • ¼ cups Dijon Mustard
  • 4 pieces Chicken Breasts

Preparation

First, preheat your oven to 350F.

In a large Ziplock baggie, combine your French-fried onions and parmesan cheese. Shake to combine. Once combined, use either your hands or a can to crunch the onions into smaller pieces. Transfer to a pie plate once done.

In another pie plate, combine your two eggs and mustard. Whisk together until mixed thoroughly.

Dip chicken breasts in the egg mixture, making sure that you thoroughly coat. Transfer to the onion pie plate and coat chicken in the onion/cheese mixture.

Place chicken on a wire baking rack (with another pan underneath to catch juices) in your 350 degree oven for 30 minutes (or until juices run clear). You could easily do this on a regular baking sheet, but make sure to spray your cooking sheet or else they will stick!

Very good – the chicken comes out super moist. This will be the third time we are making it for dinner in 6 weeks!!

I tried this tonight for dinner. It was easy and excellent. Everyone in my family gave it the thumbs up. I also made it as a meal for another family, they loved it.
