Description

Pappardelle Pasta with Sausage and Tomato Sauce.

Ingredients

  • 2 Tablespoons Unsalted Butter
  • 1 whole Medium Onion, Diced
  • 3 whole Johnsonville Sweet Italian Sausages - Casings Removed
  • 1 pound Pappardelle Pasta
  • 14-½ ounces, weight San Marzano Tomatoes
  • Salt And Pepper, to taste
  • ¼ cups Dry White Wine
  • 1 Tablespoon Balsamic Vinegar
  • 1 Tablespoon Flat-leaf Italian Parsley, Chopped
  • Optional Garnishes: Chopped Flat Leaf Parsley, Grated Parmigiano Reggiano, Etc

Preparation

1. Into a large saute pan, melt butter over medium heat. Add onion and sausage. Reduce heat to Low. Stir to combine. Cook for approximately 10 minutes.

2. Place a large pot of water on to boil. Season generously with salt. When water boils, add pasta and cook until al dente.

3. Add tomatoes (crushing them with your hands or spoon) to onion and sausage mixture. Season with salt and pepper. Stir and cook for an additional 10 minutes. Add white wine and cook for an additional few minutes.

4. When pasta is al dente, drain and add to the tomato mixture. Toss to combine. Add balsamic vinegar and parsley.

5. Garnish with more parsley if desired and a grating of Parmigiano Reggiano!

I made this last night and it was absolutely wonderful! This will be a keeper recipe. It’s fast and easy to make once you figure out what and where to get the papperdelle pasta – tee hee- yes I must admit I had never heard of it but I found it at Whole Foods. Yummy and it’s thinner than fettucini – i think… anywhoo this is a wonderful recipe and you will love it.

Delicious and the left overs tasted great the next day. My husband was a bit wary because he is used to eating pastas with heavy sauces, but he was pleasantly surprised with how good this was. I will make this again.

This was so good, not to mention very easy! Start to serving time was about 25 minutes and everyone in the family loved this recipe, including each of my four children. My husband declared it a “must have again” recipe.

I could not find pappardelle pasta, so I used farfalle and it worked just fine. Really, any pasta that you have on hand would work.

I highly recommend this recipe!
