Description

A pot roast-turned-sandwich recipe that I made from stuff I had in my pantry (minus the roast of course – that was in my freezer!). This is a recipe my entire family loves!

Ingredients

  • 4 pounds Beef Roast (I Use Bottom Round Roast)
  • 1 pinch Salt And Pepper
  • 2 Tablespoons Canola/vegetable Oil
  • 6 Tablespoons Butter, Softened
  • 1 whole Onion (preferably A Large One, But If You Don't Love Onions A Medium Will Work)
  • 2 cloves Garlic, Chopped
  • 5 cups Water
  • ½ cups Soy Sauce
  • 1 envelope Lipton Onion Soup Mix (or Whatever You Have In Your Pantry), 1 Ounce Packet
  • 1 teaspoon Kitchen Bouquet Seasoning And Browning Sauce
  • 1 loaf French Bread
  • 1 cup Swiss Cheese

Preparation

Open roast, rinse off, and lightly salt and pepper on each side. Pour oil in large frying pan and heat over medium heat. Place roast in heated frying pan and brown on all sides. Remove and place in slow cooker.

After draining the oil from the frying pan, melt 2 tablespoons of butter and saute onions and garlic for about 3 minutes, or until onions are translucent. Add to slow cooker.

Mix water, soy sauce, soup mix and browning sauce to a large bowl. Stir together to combine and then pour in slow cooker. Cook on low setting for 5-6 hours or until fork tender.

When meat is cooked, slice a loaf of French bread in half (or deli rolls) and spread the remaining amount of butter over each half. Broil for 2-3 minutes until golden brown. Top with beef, onions (if desired), and Swiss cheese. Serve with pan juices.
