Description

Curried chicken and spinach

Ingredients

  • 1 whole Onion, Chopped
  • 8 cloves Garlic, Minced
  • ½ cups Chopped Pepper (your Choice)
  • ⅓ cups Oil
  • 1-½ pound Boneless, Skinless Chicken Breasts, Chopped
  • ⅛ teaspoons Ground Cloves
  • ½ teaspoons Ground Cinnamon
  • 2 teaspoons Salt
  • 1 teaspoon Chili Powder
  • 1 teaspoon Turmeric Powder
  • 1 cup Water
  • 10 ounces, weight Frozen Spinach
  • 1 teaspoon Fenugreek Powder
  • 2 Tablespoons Butter

Preparation

Prep:
Dice onion and garlic together. Chop pepper and set it aside. Chop chicken and set aside.

Cook:
Saute onions and garlic in oil over medium high heat till translucent.

Add chicken, cloves, cinnamon, salt, chili pepper, and turmeric and continue to cook till chicken is no longer pink.

Add water and reduce heat to a simmer till chicken is fully cooked (about 10 minutes).

Add frozen spinach, peppers, and fenugreek and cook till the spinach is done (about 10 minutes).

Stir in some butter and serve with rice.

Meh. I love Indian food and was disappointed with this. I will need to add a lot of tweaks in order to be able to eat all the leftovers.

I made this over the weekend and it was delicious! I added some tomato paste just because I almost never follow recipes to the letter. It was a good addition, my husband and I loved this dish, I will def be making it again.
