Description

A deliciously seasoned pork loin with veggies.

Ingredients

  • 1 whole Sweet Onion
  • 2 whole Sweet Potatoes
  • 5 whole Carrots
  • 2 whole Bell Peppers, Core And Seeds Removed
  • 1 whole Fennel Bulb
  • 2 whole Golden Delicious Apples, Cored
  • 2 pounds Pork Loin
  • 1 teaspoon Salt And Pepper, Adjust To Taste
  • 4 cloves Garlic, Minced
  • 2 Tablespoons Dried Rosemary
  • 2 Tablespoons Dried Thyme
  • Extra Virgin Olive Oil, Enough To Drizzle In Your Pan And Over The Pork

Preparation

Preheat the oven to 450°F

Chop all of the vegetables into 1″ chunks.

Drizzle olive oil in the bottom of a roasting pan (use one with a lid—you’ll need it in a bit) and place the pork loin in the roaster. Cover the pork with a drizzle of olive oil, salt, pepper, garlic, and dried spices, and massage everything into the meat.

Add the vegetables to the pan. Cover the roaster and put it in the oven. Roast for an hour, or until the pork is done.

Remove the roaster from the oven, slice the pork, and serve.
