Description

A much lighter piece of chicken for dinnah!

Ingredients

  • 4 whole Chicken Thighs, Skin And Extra Fat Removed, Rinsed
  • ½ cups All-purpose Flour
  • 1 whole Egg
  • 2 Tablespoons Milk
  • 3 dashes Hot Sauce
  • ¾ cups Panko Bread Crumbs
  • 1-½ teaspoon Cajun Seasoning
  • ½ teaspoons Paprika
  • 1-½ Tablespoon Peanut Oil
  • Salt And Pepper, to taste

Preparation

Preheat oven to 375ºF. Line baking sheet with foil, nonstick cooking spray or a silicone baking mat. Set aside.

In a shallow bowl, stir together flour, salt and pepper. In another shallow bowl, stir whisk together egg, milk, hot sauce, salt and pepper. In a third shallow bowl, stir together panko, Cajun seasoning, paprika, salt, pepper and oil until evenly mixed.

Dredge prepared chicken in flour. Dip into egg mixture. Press into panko breading and place on prepared baking sheet. Bake 40-50 minutes or until crust is golden and chicken is completely cooked thoroughly.

Yum! I think this would work the same with chicken breast tenders. It’s worth a try. Thanks for sharing.

This was the best oven fried chicken I’ve ever had! Next time I will probably try using a wire rack over the cookie sheet to keep the bottoms from getting soggy. My chicken thighs cooked in 30-some minutes because they were small “hormone free” ones from the store–I used a meat thermometer to check the internal temp. The weren’t dry, but were scrumptious and juicy! I used six small thighs and had just enough panko crumbs. Also, if you use Tony Chachere’s seasoning in the panko, you might want to cut down on the salt in the egg and flour. Next time I’d skip salt altogether since I’ll be using Tony’s again.
