Description

A tasty alternative to your favorite fried comfort food!

Ingredients

  • 1 cup Panko Bread Crumbs
  • ¼ cups Low-fat Buttermilk
  • 1 teaspoon Cajun Seasoning
  • 5 wheels Drumsticks, Defrosted

Preparation

Preheat oven to 400ºF.

Pour bread crumbs onto a tray or a plate.

Mix buttermilk and seasoning together.

One by one, drench chicken in the buttermilk mixture then cover in bread crumbs. Place in a greased baking/casserole dish.

Bake for 60–65 minutes at 400ºF or until chicken is cooked through.

I read that buttermilk made chicken more moist and tender, so since I was using boneless, skinless chicken breasts instead of chicken with skin on I doubled the amount of buttermilk and marinated the chicken over night. I also sprayed the tops of the breaded chicken with a light coating of canola oil spray so the bread crumbs would brown. The chicken was very moist, and I love the flavor of the cajun seasonings. My chicken breasts were pretty large so I baked them for 45 minutes. Will definitely be making this again. Healthy and very tasty!
