Description

I enjoy this recipe because we don’t have a deep fryer and when you’re doing it on the stove, there are a lot of burns involved (well for me anyway!). This is just as tasty as can be and easy, too.

Ingredients

  • 1-½ stick Unsalted Butter
  • 3 cloves Garlic, Minced
  • 2 cups Bread Crumbs
  • ⅔ cups Parmesan Cheese, Grated
  • 2 teaspoons Kosher Salt
  • Freshly Ground Black Pepper, To Taste
  • 3-½ pounds Chicken, Cut Into 10 Peices (or All Thighs, Wings, Or Breasts If Desired)

Preparation

Preheat the oven to 350F. Combine the butter and garlic in a small saucepan. Heat over medium-high heat until the butter has melted. Pour into a large bowl and cool to room temperature.

Mix the bread crumbs, cheese, salt, and pepper in a large bowl. Now comes my secret. You ready?

If you have skin on the chicken pieces, take it off. Yup, take off the skin. I always hated it when I worked really hard to make fried chicken and then when you take your first bite it all slides off. So, to eliminate that problem, you take the skin off. It’s that easy!

Now, dip each chicken piece, one at a time, into the melted garlic butter. Transfer to the bread crumb mixture and turn until coated on all sides. Arrange the chicken in one flat layer on a large baking sheet. Bake until lightly browned and just cooked through, 50-60 minutes.
