When I was younger I watched cooking shows on PBS. One of the shows was Cooking in Amish Country and one of the episodes was about oven fried chicken. I have adapted the recipe over the past 20 years and this so simple and easy to clean up. Great crowd pleaser.
Wash your chicken and put it in a large bowl with all of the buttermilk and Old Bay seasoning. Allow to marinate at least 4 hours or overnight. Overnight is best!
Preheat your oven to 425ºF. Mix the canola oil and butter together and place into your oven proof pan. I usually line my cookie sheets with foil or parchment paper to bake the chicken.
Take chicken out of the buttermilk mixture and pat dry. Place the flour, salt and pepper into a baggie. Place chicken into the baggie and toss. Take out, shaking off any excess flour, and place onto the cookie sheet.
Bake for 45 minutes or until juices are clear. Halfway through, turn the chicken over.
