The word picnic always makes me think of cold fried chicken and potato salad. Two dishes my mother always made in the summer time. I am trying to cook and eat healthier at my house so I decided to alter her wonderful fried chicken slightly. We also like spicy at my house so I added a few “extras” to her chicken coating recipe.
Spray a cookie sheet with cooking spray 3 times to coat it completely. Set it aside. Preheat oven to 400 F.
Cut the chicken breasts up into 4 or 5 strips per breast. Mix the eggs in a bowl and set aside. Into a gallon-sized Ziplock bag add the flour, bread crumbs and all of the spices. Dip the chicken pieces into the egg mixture and then put the chicken pieces into the bag and shake to coat completely.
Place chicken on the cookie sheet and spray each piece of chicken with cooking spray. Bake 20-25 minutes until chicken is golden brown. Makes 8 servings.
