Description

A super easy, creamy and flavorful side dish.

Ingredients

  • 3 Tablespoons Butter
  • 1-½ cup Orzo
  • 3 cups Chicken Or Vegetable Stock
  • 6 Tablespoons Fresh Chopped Basil
  • 1 cup Parmesan Cheese
  • ½ teaspoons Salt
  • ¼ teaspoons Pepper

Preparation

Melt the butter over medium heat. Add the orzo and saute for a few minutes, until the orzo starts to get golden brown. Add the broth and cover and simmer for 20 minutes, until all the broth has been absorbed. Remove from the heat, add the basil and Parmesan and salt and pepper to taste.

This was amazing! Right before I took this off the heat, I added some chopped red onion. So great. I marinated some chicken tenders in red pepper marinade and baked them and served it over the orzo. My husband loved it and so did I.

SO yummy and SO easy! I added some chicken to it (rotisserie) and voila – healthy dinner that everyone loves!

I LOVE this dish. My mom cooked orzo for us when we were kids and she still does! I added diced black olives and diced red pepper to this, as well as olive oil. YUM!

Delicious! Went perfectly with grilled steak and a green salad tonight. I love how fast it all came together with very little work. Definitely adding this to the regular rotation.
