Description

This is a simple, healthy, and delicious meal to prepare during a busy work week. It has become one of my go-to meals. The Asiago and Parmesan cheese make it flavorful and creamy. A wonderful one pot meal to try!

Ingredients

  • 1 cup Water
  • 16 ounces, fluid Low Sodium Chicken Broth
  • 12 ounces, weight Boneless, Skinless Chicken Breasts
  • 1-¼ cup Uncooked Orzo Pasta
  • 1 cup Frozen Peas, Thawed
  • ½ cups Grated Asiago Or Parmesan Cheese
  • ¼ teaspoons Salt
  • ¼ teaspoons Dried Rosemary Or Basil
  • ⅛ teaspoons Black Pepper

Preparation

Prep: Cut your chicken breasts into bite-size pieces, grate your cheese (I used mostly Asiago but added in some Parmesan as well), and thaw out your 1 cup of frozen peas.

Combine the water and chicken broth in a Dutch oven or large stockpot; bring to a boil. Add chicken and pasta; bring to a boil again. Reduce the heat. Stir often while it simmers 12 minutes or until most of the liquid is gone and pasta thickens up.

Remove from heat. Stir in peas, 1/4 cup cheese or more if you’d like, salt, your herb of choice and pepper until well combined. Taste so you can adjust the seasonings to your likings.

Use the remaining cheese to top each serving.

This was simple and tasty. It wasn’t beaming with tons of flavor, but I appreciated it’s simplicity.

This was yummy – I sub’d asparagus for the peas since we aren’t pea lovers and added some red pepper for a little kick and it was perfect for this 8 degree night!
