Another quick delicious chicken recipe. A great budget-friendly dinner, perfect for a busy weeknight!
Preheat oven to 425ºF.
Season chicken on both sides with salt, pepper, rosemary, thyme, and lemon zest.
Heat an oven proof skillet oven high heat with butter and olive oil until butter melts. Add the chicken skin side down and cook until golden brown, about 7 to 8 minutes per side. Flip the chicken and brown the other side. Stack chicken on the side of the pan or remove to a plate.
Place cauliflower and garlic in the pan and coat with pan juices. Cook for approximately 3 minutes or until the bottom of the cauliflower has a bit of color. Stir. Place the chicken on top of the cauliflower and in the preheated oven for about 30-35 minutes or until chicken is cooked through. Top with parsley and fresh squeezed lemon. Serve.
