Description

This One-Dish Chicken Cacciatore Pasta Bake is quick and easy to prepare then baked in the oven, all in one dish! You don’t even need to pre-cook the pasta!

Ingredients

  • 1 Tablespoon Olive Oil
  • 4 whole Chicken Breasts, Boneless, Skinless, Rinsed And Patted Dry
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 whole Red Pepper, Stem And Seeds Removed, Chopped
  • 1 whole Green Pepper, Stem And Seeds Removed, Chopped
  • 1 whole Onion, Chopped
  • 2 cloves Garlic, Chopped
  • 11 ounces, weight Penne Pasta
  • 24 ounces, fluid Tomato Basil Spaghetti Sauce
  • ⅔ cups Water
  • 1 cup Mozzarella Cheese, Shredded
  • ½ cups Parmesan Cheese, Grated
  • ½ cups Fresh Basil Leaves

Preparation

Preheat the oven to 360°F (180°C). Grease a 7×11 inch baking dish with the olive oil.

Season the chicken breasts with salt and pepper and add them into the bottom of the baking dish next to each other. Evenly top with the chopped peppers, onion and garlic. Add the dry pasta on top and gently push everything down.

Carefully pour the spaghetti sauce and water over everything, spreading it out evenly with the back of a spoon. Tightly cover the baking pan with aluminium foil and bake on the middle rack for 60 minutes.

Remove the foil, sprinkle the cheese on top and finish baking for 10-15 minutes or until the cheese is bubbly and starting to brown. Remove from oven.

Spoon the pasta onto four plates and top each serving with a chicken breast and vegetables. Sprinkle with fresh basil leaves if you like and serve immediately.
