A meal inspired by a pantry full of random odds and ends. But tasty, quick, and easy!
1. Boil the chicken breasts until cooked through. Then slice the breasts into strips. (This recipe is also a good use for already-cooked chicken leftovers, which cuts down on the cooking time even more!)
2. Heat the oven to broil.
3. Brush the bread slices with olive oil and toast lightly.
4. Top the toasted bread slices with, in order: Olive tapenade, sliced red pepper, sliced chicken, and crumbled goat cheese.
5. Broil until the cheese is melted and slightly browned.
