Description

Lobster, cooked in a luscious lemony herb and butter sauce makes these rolls extra special!

Ingredients

  • 6 Tablespoons Unsalted Butter
  • 1 whole Lemon, Juice And Zest From
  • 1 clove Garlic, Minced
  • 2 teaspoons Fresh Dill, Chopped
  • ¼ teaspoons Sea Salt
  • ⅛ teaspoons Freshly Ground Pepper
  • 5 pieces Lobster Tails, Small
  • 3 Tablespoons Mayonnaise
  • ½ teaspoons Fresh Dill, Chopped
  • 1 dash Old Bay Seasoning
  • ½ whole Lemon, Juice From
  • 1 dash Sea Salt
  • 1 dash Freshly Ground Pepper
  • 4 whole Small Rolls, Crusty, Split Almost In Half

Preparation

1. Preheat your broiler set on high, and make sure the rack is 4 – 6″ from heating element.

2. Melt butter and the next 5 ingredients (lemon juice and zest, garlic, dill, salt and pepper) in a small saucepan over low heat.

3. Split lobster tails in half and place on a foil lined jelly roll or half sheet pan, meat side up.

4. Drizzle butter sauce over tails. Broil the tails for about 8 minutes, until lobster is opaque, but still tender when pierced with a fork.

5. Remove lobster from oven and set aside to cool slightly.

6. Meanwhile, combine mayonnaise, dill, old bay seasoning and lemon juice in a medium bowl.

7. When lobster is cool enough to handle, remove meat from the shells with a fork, starting at the end of the tail – the meat should pull right out, usually in a single piece.

8. Chop each piece of meat into two pieces. Add the lobster meat to the mayonnaise mixture and gently combine. Add salt and pepper if desired.

9. Split rolls almost completely in half, and stuff with 2 or 3 heaping tablespoons of that luscious filling. Enjoy!

Yum! I only made a half batch, as lobster is extra pricey in Arizona!, but it still yielded two good sized rolls worth of meat. The lemon+dill mayo is not overpowering, but really adds a zing of flavor that’s delicious!
