Description

Is there any combination that screams, “SUMMER!” more than fresh tomatoes, garlic and basil? This is the perfect summer pasta sauce since it doesn’t require any heat. Whip it together in the morning, leave it on your counter all day where the garlic, tomatoes, basil, parsley, and extra virgin olive oil create their own sauce.

Come dinner time all you have to do is boil a pound of pasta and toss! So delicious!

Ingredients

  • 1 pound Plum Tomatoes, Seeded And Diced
  • ¼ cups Fresh Parsley Leaves, Packed
  • 2 cloves Garlic
  • Kosher Or Sea Salt, To Taste
  • 7 leaves Fresh Basil
  • Fresh Ground Black Pepper To Taste
  • ½ cups Extra Virgin Olive Oil

Preparation

Place seeded and diced tomatoes in a medium sized bowl.

On your chopping board, place the parsley, then the garlic. Sprinkle lightly with about 1/2 teaspoon of salt and then lay the basil on top.

Mince it all finely and add to the tomatoes. Add additional salt and pepper to taste and then pour the olive oil over the whole lot.

Leave, tightly covered, at room temperature all day or in the fridge for at least 2 days to allow flavors to combine.

To finish the dish, just toss the sauce with the hot pasta which has been cooked and drained according to package directions. Serve hot or room temperature.
