Description

This is not your typical chicken/broccoli/rice casserole. A couple of unusual ingredients give this dish a one-of-a-kind flavor.

Ingredients

  • 3 whole Boneless, Skinless Chicken Breasts, Cooked And Diced
  • 2 boxes (10 Oz. Box) Frozen Green Giant Broccoli With White Cheddar (can Substitute Broccoli With Cheese Sauce)
  • 2 boxes (10 Oz. Box) Frozen Green Giant Rice Pilaf (can Substitute Rice With Peas And Mushrooms)
  • 10-¾ ounces, weight Canned Cream Of Mushroom Soup
  • 1 cup Mayonnaise
  • 2 Tablespoons Dry Vermouth
  • 4 ounces, weight Mushroom Pieces And Stems, Not Drained
  • 8 ounces, weight Canned Sliced Water Chestnuts

Preparation

1. Microwave the frozen products according to package directions, using the low end of the time range (example: if package says 4 – 6 minutes, cook for 4 minutes).

2. In a large mixing bowl, combine the soup, mayo, vermouth, undrained mushrooms, and water chestnuts.

3. In a 13 x 9 casserole, layer as follows: one package of rice, one package of broccoli, 1/2 of the chicken. Repeat layers.

4. Pour the soup mixture over the top of the casserole and spread to cover evenly and completely.

5. Bake at 350 degrees for 30 to 40 minutes, until slightly browned and bubbly.
