Very often when cooking a quick chicken dinner, I have to come up with a marinade using what is already in the fridge. This has become my favorite go-to chicken dinner because I always have all the ingredients already and if I don’t, it is really flexible!
Start by salt and peppering the chicken on both sides. Then place all the chicken in a large storage bag. I simply pour all the ingredients straight into the bag. After I squeeze the juice of lemons or limes in I usually leave one half in the bag just for a little extra kick. Using the chicken tenders, they really can sit in the marinade for as little as 30 minutes but the longer the better. You can cook these in foil packets or a covered pan in the juices for about an hour at 350F.
