Description

Here’s a recipe for my all-time favorite chicken breast marinade! Once cooked, the chicken is so juicy and flavorful, and can be used in wraps, tacos, sandwiches, or just on its own!

Ingredients

  • 2 Tablespoons Apple Cider Vinegar
  • 2 teaspoons Dried Rosemary
  • 1 Tablespoon Dijon Mustard
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • ¼ teaspoons Kosher Salt
  • ¼ teaspoons Fresh Ground Pepper
  • ¼ cups Extra Virgin Olive Oil
  • 1-½ pound Chicken Breast Cutlets Or Butterflied Whole Chicken Breasts

Preparation

In a gallon-sized Ziploc bag, combine all listed ingredients.

Leaving some air in the Ziploc bag, seal it, and then toss around the bag until chicken is completely and evenly covered with all of the ingredients.

Then carefully re-open the bag only about an inch and press to release as much air from the bag as possible.

Place marinating chicken in the refrigerator for at least 30 minutes before cooking.

To cook, heat 2 tablespoons of your favorite cooking oil (I prefer macadamia nut oil or olive oil) in a large skillet over medium heat. Cook chicken breasts for approximately 4 minutes on each side or until the internal temperature reaches 160ºF.

What you’re left with is juicy, delicious chicken. Enjoy!

I loved this recipe! The vinegar couldn’t be tasted after the chicken was cooked, but it sure took the taste of the herbs through the meat. I did have to steam my chicken in the skillet with the lid on for 20 minutes, then turned up the heat to brown it up some more. This is an easy, delicious weeknight meal option. I will definately be making this again and again.
