Description

This delicious dish is perfect for all you mushroom lovers out there! Great for a mid week meal if you are looking to change up the regular ol’ pasta routine!

Ingredients

  • 1 box Linguini, 16 Ounce Box
  • 2 Tablespoons Butter
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Minced Garlic
  • ½ whole Yellow Onion, Thinly Sliced
  • 1 pound Fresh Button Mushrooms, Sliced
  • 1 teaspoon Dried Rosemary
  • 1-½ teaspoon Dried Thyme
  • 1-½ teaspoon Garlic Salt
  • 1 teaspoon Pepper
  • ½ cups Marsala Wine
  • 1-¼ cup Heavy Cream
  • 2 Tablespoons Tomato Paste
  • ¼ cups Fresh Parsley, Chopped
  • ½ cups Freshly Grated Parmesan, For Sprinkling

Preparation

Cook pasta according to package directions.

Meanwhile, melt butter in a large sauce pan over medium heat and once melted, add the olive oil, garlic and onions. Cook about 3 minutes then add mushrooms. Cook until mushrooms are tender, about 10 minutes.
Season with herbs, garlic salt and pepper.

Add the wine, cream and tomato paste. Cook down for another 10 – 15 minutes. Stir in the cooked pasta, until combined then sprinkle with the fresh parmesan and the fresh parsley.

ENJOY!

My 14-yr old just discovered that he loves mushrooms – and this is his new favorite dish! Such wonderful flavors and comes together easily. This will go in our rotation – thank you!!!
