Based on Chili’s Monterey Chicken.
Preheat your oven to 400 F. Rinse and pat dry the chicken breasts, and trim any fat. Package the chicken in parchment paper packets (instructions can be found via Google search), and bake for about 20-25 minutes, or until the chicken reaches 165F internally. You can also grill the chicken, but this will produce a very moist chicken that is perfect for this dish.
When the chicken is done, remove it from the parchment paper. Brush a little barbecue sauce onto each breast, top with some cheese, and two pieces of bacon.
This recipe is very easily adjustable to the number of people you are feeding. You can make just one for yourself, or enough to feed your whole family.
