Description

I was doing a nanny gig with an 11 year old young man, trying to find a way to get veggies into a picky eater! He insisted he liked any kind of sauce on pasta, I knew better!

Ingredients

  • 1 container Frozen Spinach, 10 Ounce Box
  • 6 Tablespoons Butter
  • 2 cups Milk Or Half-and-Half
  • 1 clove Garlic
  • 1 pinch Salt And Pepper
  • ½ cups Grated Parmesan Cheese
  • 1 pinch Red Pepper Flakes
  • 1 can (14 Oz. Size) Diced Tomatoes With Oregano And Basil
  • ¼ cups Parmesan Cheese, Grated, Optional Garnish
  • 1 box Spaghetti Noodles, 16 Ounce Box, Prepared According To Package Instruction

Preparation

Remove box of spinach from freezer, allow to defrost in a colander or strainer. Alternately, run lukewarm water over the sealed package until defrosted. Squeeze all liquid out of spinach and set aside.

Melt butter in a saucepan over medium heat. Add milk or half and half, cook until reduced by about 1/3, stir and watch continuously. Press garlic clove through a garlic press or mince finely. Add it to the pan and also add salt and pepper. Add 1/2 Cup of parmesan cheese, keep stirring! Add a tiny bit of red pepper flakes and the spinach and mix to combine. Add the can of tomatoes and continue until everything is heated through and well combined.

Serve over thin spaghetti. Add grated parmesan cheese if desired.
You might be able to hide some shredded carrots in the sauce as well…..Made it fun to get an 11 year old to eat some veggies!
